Spiced Lentils with Shiitake Mushrooms

Ingredients
- 3 tbsp. Olive oil
- 14 oz Black or brown lentils (1 can, rinsed)
- 10 oz Shiitake mushrooms, de-stemmed and cut into 1/4" slices
- 2 Garlic cloves, minced
- 1/4 tsp. Ground cumin
- 1/4 tsp. Ground coriander
- 1/4 tsp. Fresh ground black pepper
- 1/8 tsp. Turmeric
- 1 tsp. Dried parsley
- 1/2 lb Swiss chard or kale, de-stemmed and coarsely chopped
- Salt
Instructions
- In a medium sauce pan, heat 2 tbsp olive oil over medium heat. Add the shiitake mushrooms and season with salt. Cover and cook until tender and browned, stirring occasionally, 5-7 minutes.
- Add 1 tbsp to the sauce pan and stir in the minced garlic, cumin, parsley, pepper, and turmeric. Cook and stir until fragrant, 1 minute.
- Add the greens and cook, stirring until wilted, 2 minutes. Add the lentils and 1/4 c water, and simmer for 3 minutes.
- Salt to taste. Ladle into bowls and garnish with more parsley.
