			Instructions
- Preheat the oven to 350F and grease a 9x5 baking dish, lining the bottom with parchment paper.
- For the topping, put the softened butter, flour, brown sugar, cinnamon, and other spices (optional) in a bowl and massage together with your hands or a fork until coarse crumbs form. If you're finding it's not getting crumbly enough, add flour 1 tsp at a time and continue combining.
- In a large mixing bowl, or the bowl of a stand mixer, cream together the butter and sugar until smooth and light in color. Scrape down the sides occasionally with a spatula.
- Add the vanilla and egg, mix in.
- In a separate bowl, sift and whisk together the flour, baking powder and salt.
- Add a third of the flour to the wet mixture and fold until just incorporated. Fold in the milk, and when combined, add the rest of the flour.
- Pour all the cake batter in the baking dish, and spread to all edges evenly (an offset palette knife works well for this).
- Sprinkle the topping over the batter evenly, and press lightly with your hand to flatten and adhere it to the cake.
- Bake in preheated oven for around 45 minutes, or until a toothpick comes out clean. Cool completely on a wire rack before serving.
