Ingredients
- 2 1/3 lb Fillets of fresh Cod
- 2 tbsp. Butter, melted
- 1 tsp. Lemon juice, freshly squeezed
- 1/2 tsp. Lemon zest, freshly grated
- 1/2 tsp. Dill, dried
- Salt
- Pepper
Instructions
- Rinse fish fillets and pat dry with a paper towel. Season both sides with salt and pepper. Lay fish on an ungreased baking sheet and let rest.
- Preheat oven to 450°F. Melt butter in a small bowl or sauce pan, stir in the lemon zest and dill.
- Drizzle half of the butter mixture over fish. Flip fillets over and drizzle remaining butter on top. Sprinkle with lemon juice.
- Bake at 450 degrees for 10-12 minutes, or until fish is opaque and flaky. Generally speaking, 145°F is the desired internal temperature, but texture is quite important.
- Remove fish from pan and let rest for 1-2 minutes before serving. Garnish with lemon wedges if desired.
