Ingredients
- 1 Shallot, chopped
- 2 Cloves garlic, minced
- 1 Large tomato, chopped. Can substitute 2 smaller tomatoes, i.e. romas
- 1 tsp. Dried oregano
- Salt
- Pepper
- 1 Bay leaf
- 1/8 c Water
- 2 tsp. Tomato paste
Instructions
- In a saute pan on medium heat, heat 1 tsp olive oil. Sauté shallot for 1-2 mins until turning translucent, then add garlic for 1-2 minutes until fragrant.
- Add chopped tomato, tomato paste, water and oregano to saute pan. Salt and pepper to taste.
- Simmer for 30 mins until reduced and thick, stirring occasionally.
- If a smoother texture is preferred over chunky, the reduced ragu can be blended.
