Tomato Ragú

Ingredients

  • 1 Shallot, chopped
  • 2 Cloves garlic, minced
  • 1 Large tomato, chopped. Can substitute 2 smaller tomatoes, i.e. romas
  • 1 tsp. Dried oregano
  • Salt
  • Pepper
  • 1 Bay leaf
  • 1/8 c Water
  • 2 tsp. Tomato paste

Instructions

  1. In a saute pan on medium heat, heat 1 tsp olive oil. Sauté shallot for 1-2 mins until turning translucent, then add garlic for 1-2 minutes until fragrant.
  2. Add chopped tomato, tomato paste, water and oregano to saute pan. Salt and pepper to taste.
  3. Simmer for 30 mins until reduced and thick, stirring occasionally.
  4. If a smoother texture is preferred over chunky, the reduced ragu can be blended.
