Shallot Champagne Vinaigrette

Ingredients
- 1/2 Shallot, diced
- 1 Garlic clove, minced
- 1 tbsp. Dijon mustard
- 2 tbsp. Champagne vinegar
- 1/8 tsp. Freshly ground black pepper
- 1 tsp. Fresh lemon juice
- 1/4 tsp. Salt
- 1 tsp. Sugar
- 1/4 c Extra virgin olive oil
Instructions
- In a small/medium bowl, whisk together the shallot, garlic, dijon, vinegar, lemon juice, salt, and pepper.
- Whisking continually, slowly pour in the olive oil in a continually stream to emulsify into a vinaigrette.
- Optional: For a smoother (less chunky) dressing, pulse the vinaigrette in a food processor until desired consistency.
