Quinoa with Apple Cabbage Slaw

Ingredients
- 1 Green apple, sliced into 1/4" matchsticks
- 1/3 Red cabbage, chopped (about 2 oz)
- 3 tbsp. White balsamic dressing
- 1 tbsp. Olive oil
- 1/2 c White quinoa
- 2 Garlic cloves, minced
- 1 c Water
- Chives
- 2 Dried figs, chopped
- Salt and pepper to taste
Instructions
- Place dried figs in a cup or bowl and cover with water. Let rehydrate for at least 10 minutes before chopping.
- Add green apple, cabbage and balsamic dressing to a small bowl. Toss to combine, salt and pepper to taste. Set aside
- In a small/medium sauce pan, heat 1 tbsp olive oil over medium heat. Add quinoa and garlic and stir constantly for 1-2 minutes until quinoa is toasted.
- Add 1 cup water to the quinoa, bring to a boil, then reduce to low heat and simmer covered for 15 minutes or until the water is evaporated and quinoa is soft.
- When quinoa is done, remove from heat, fluff with a fork, stir in chives, and leave covered until ready to serve, at least 3 minutes.
- Pour quinoa in bowl with apple-cabbage slaw, add figs, and stir to combine.
