Banana Walnut Bread

Ingredients
- 3 Bananas, properly ripened (no green at the stem), mashed
- 1/3 c Butter, melted
- 1/2 c Sugar (scant)
- 1/4 c Brown sugar, packed
- 1/4 tsp. Salt
- 1 Egg
- 1 tsp. Vanilla extract
- 1 tsp. Baking soda
- 1 1/2 c All-purpose flour
- 2/3 c Walnuts, chopped (optional)
- 1/4 tsp. Cinnamon
- 2 pinches Allspice
Instructions
- Preheat oven to 350°F. Butter the sides of a 4x8" loaf pan, and cut out a piece of parchment paper to line the bottom.
- In a large bowl, mash bananas with a fork or potato masher until a lumpy puree.
- Using a wooden spoon, mix butter into the mashed bananas. Stir in the sugars, egg, and vanilla.
- Sprinkle the baking soda, salt, cinnamon, and allspice over the mixture and stir in.
- Stir in the flour in 2 batches, just enough to combine but do not over mix (some small lumps are ok). Stir in the chopped walnuts (optional).
- Pour the batter into the pan and bake for about 1 hour. Test at 50 minutes, and if still gooey, bake for another 10-13. Our last bake was exactly 1 hour, 3 minutes.
- Let cool in pan for 1 minute or so, then remove and let cool on a rack until cool enough to touch. Slice with a serrated knife and serve warm with salted butter.
