Champagne Vinaigrette

Ingredients
- 1 Garlic clove, minced
- 1/2 shallot, minced
- 1 1/2 tsp. Dijon mustard
- 2 tbsp. Champagne vinegar
- 1 tbsp. Fresh lemon juice
- 2 tsp. honey
- 1/4 c Extra virgin olive oil
- Salt and pepper
Instructions
- In a medium mixing bowl, whisk together the garlic, mustard, vinegar, honey, and half the lemon juice.
- With a slow and steady stream, whisk in the olive oil to emulsify.
- Add a couple pinches of salt and pepper, and more lemon juice to taste.
- Instead of whisking, you can combine all ingredients in a blender or food processor and puree until smooth.
