Ingredients
- 1 lb Chicken breasts
- 2 tbsp. Butter
- 1/2 c Kalamata olives, pitted, drained
- 1/2 c Feta cheese
- 2/3 c Heavy cream
- 1/2 c Pesto
Instructions
- Preheat oven to 375°F. Butter a casserole dish. Season chicken with salt and pepper and let rest.
- Heat butter in a medium skillet over medium heat. Sauté chicken for 4-5 minutes on each side until browned.
- Place chicken in casserole dish, add olives and feta, spreading evenly.
- In a small bowl, whisk together cream and pesto. Pour over ingredients in casserole dish.
- Bake for 24-30 minutes, until sauce is bubbling and chicken reads 165°F in the thickest part.
