Ingredients
- 3 Large egg whites
- 1 c Granulated sugar
- 1 c Butter, softened, cubed
- 1 tsp. Vanilla extract
Instructions
- In the bowl of a stand mixer (or heat-safe bowl), whisk together egg whites and sugar until combined.
- In a sauce pan, heat 1" of water to simmering. Place bowl over pot and continue to whisk until the mixture and 160°F.
- Whisk in the stand mixer on medium-high until the meringue is stiff and the bowl is no longer warm to the touch.
- Switch to the paddle attachment. Mixing on medium-low, add the vanilla, then slowly add the cubed butter and mix until smooth.
