Oatmeal Raisin Cookies
Ingredients
- 1 c All-purpose flour
- 1/2 tsp. Baking powder
- 1/2 tsp. Salt
- 1/2 tsp. Cinnamon
- 1/8 tsp. Nutmeg
- 1/8 tsp. Allspice
- 14 tbsp. Butter
- 1/2 c Sugar
- 1/2 c Brown sugar
- 1 Egg
- 1/2 tsp. Vanilla
- 1 1/2 c Oats
- 3/4 c Raisins
Instructions
- Preheat the oven to 375°F. Line 2 baking sheets with parchment paper or silicon bake mats.
- In a medium bowl, sift together the flour, baking powder, salt, and spices.
- In a separate medium bowl, cream the butter and both sugars with an electric mixer on high until light and fluffy, about 3-4 minutes.
- Beat in the vanilla and egg. Turn the mixer down to low and slowly add the flour mixture in batches. Scrape the bowl occasionally with a spatula to ensure a consistent mixture.
- With a spatula, stir in the oats and raisins.
- Scoop the dough into equal portions, roughly 1 1/2 tbsp each, and place the dough balls 2 inches apart on the cookie sheets.
- Bake for 12-14 minutes, until slightly golden around the edges.
- Let cool on the baking sheets for 5 minutes before moving to a cooling rack and storage.
