Almond Flour Ginger Spice Cookies

Ingredients

  • 1 c Almond flour
  • 1 pinch Salt
  • 1/8 tsp. Baking soda
  • 1 tbsp. Sugar
  • 2 tbsp. Brown Sugar
  • 1/2 tsp. Cinnamon
  • 1 tsp. Ginger, ground
  • 1/2 tsp. Cloves
  • 1/8 tsp. Allspice
  • 3 tbsp. Butter, melted

Instructions

  1. Preheat the oven 300°F. Prepare a baking sheet (greased, parchment paper, or silicon bake sheet).
  2. Blend all the dry ingredients together and then add the melted butter. Blend well with a spoon.
  3. Taste the dough, and season accordingly. Adjust using sprinkles of whatever could be interested. I added dustings of sugar, ginger and cloves depending on the flavor I thought would improve. Plus, always taste everything!
  4. Using a spoon, scoop 1" balls of balls of dough and place them on the baking sheet.
  5. Press each cookie to flatten it using either the palm of your hand, or the back of a fork for a criss-cross pattern.
  6. Optional: sprinkle a pinch of sea salt on each cookie.
  7. Bake for 15 minutes then turn down the oven to 200°F. Flip the cookies and bake for another 12-15 minutes.
  8. When done, they should be brown on the sides and top. Let cool for 1-2 minutes before serving. For a crunchy cookie, leave them in the oven for another 5-10 minutes.
