Apple Pastry Filling

  • 2 Cosmic Crisp apples, peeled and diced (or other semi tart apples)
  • 1/4 c Water
  • 2 tsp. Cornstarch
  • 4 tbsp. Butter
  • 1/3 c Sugar, granulated
  • 1/2 tsp. Cinnamon
  • 1/4 tsp. Allspice
  • 1/4 tsp. Nutmeg
  • 1 pinch Sea salt


  1. In a small bowl, stir together the water and cornstarch.
  2. In a medium sauce pan over medium heat, melt the butter with the cornstarch slurry, sugar, cinnamon, allspice, nutmeg and salt.
  3. Bring to a low boil over medium heat and cook for 2-3 minutes, stirring frequently, until the sugar is dissolved.
  4. Add diced apples and continue to cook over medium heat for 6-7 minutes, stirring frequently.
  5. Remove from heat and let cool. Serve alone, with oatmeal, over ice cream, or use as an ingredient in your next apple pastry.
