Baked Cod with Lemon and Dill

Ingredients

  • 2 1/3 lb Fillets of fresh Cod
  • 2 tbsp. Butter, melted
  • 1 tsp. Lemon juice, freshly squeezed
  • 1/2 tsp. Lemon zest, freshly grated
  • 1/2 tsp. Dill, dried
  • Salt
  • Pepper

Instructions

  1. Rinse fish fillets and pat dry with a paper towel. Season both sides with salt and pepper. Lay fish on an ungreased baking sheet and let rest.
  2. Preheat oven to 450°F. Melt butter in a small bowl or sauce pan, stir in the lemon zest and dill.
  3. Drizzle half of the butter mixture over fish. Flip fillets over and drizzle remaining butter on top. Sprinkle with lemon juice.
  4. Bake at 450 degrees for 10-12 minutes, or until fish is opaque and flaky. Generally speaking, 145°F is the desired internal temperature, but texture is quite important.
  5. Remove fish from pan and let rest for 1-2 minutes before serving. Garnish with lemon wedges if desired.
