Beer Cheese

Ingredients

  • 1/4 c Butter
  • 1/4 c Flour
  • 1/2 tsp. Garlic powder
  • 1/2 tsp. Onion powder
  • 2 pinches Cayenne powder
  • 1 c Milk, scant
  • 2/3 c Beer, light ale or lager
  • 2 pinches Salt
  • 1 c Sharp cheddar, shredded
  • 1/2 c Mozzarella, shredded
  • 1/2 c Gruyere, shredded
  • 2 tbsp. Parmesan cheese, grated

Instructions

  1. Melt butter in a medium sauce pan over medium heat. Add flour and stir continuously to make a roux.
  2. Stir in onion powder, garlic powder, and cayenne powder. Cook 1 minute.
  3. Stir in milk until consistent, then stir in beer and cook for 2-3 minutes.
  4. Remove from heat and add cheeses. Stir until combined, melted and smooth. Stir in 2 pinches salt, to taste.
