Brown Sugar Oatmeal Cookies

Ingredients

  • 1 c Brown sugar, packed
  • 1/2 c Salted butter, softened (1 stick)
  • 1 tsp. Vanilla extract
  • 1 Egg
  • 3/4 c All-purpose flour
  • 1/2 tsp. Salt
  • 1/4 tsp. Baking soda
  • 1 1/2 c Old-fashioned oats (quick)
  • 1/2 tsp. Cinnamon, ground
  • 1 pinch Nutmeg, ground

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium mixing bowl, beat together the brown sugar and butter until fluffy. Beat in the vanilla and add the egg. Scrape the bowl occasionally to ensure all the components are combined.
  3. In a small/medium bowl, sift together the flour, salt and baking soda. Add it into the creamed mixture in 2 to 3 batches, mixing until just combined. Mix in the oats until just combined.
  4. Scoop consistent portions of dough onto baking sheets, about 1" - 1 1/2" ball, spaced out a couple inches apart.
  5. Bake until dark and chewy, 12 to 13 minutes. If you'd like a crispier cookie, cook for another minute.
  6. Let the cookies cool slightly on the baking sheets, then transfer to a plate for serving.
