Champagne Vinaigrette

  • 1 Garlic clove, minced
  • 1/2 shallot, minced
  • 1 1/2 tsp. Dijon mustard
  • 2 tbsp. Champagne vinegar
  • 1 tbsp. Fresh lemon juice
  • 2 tsp. honey
  • 1/4 c Extra virgin olive oil
  • Salt and pepper


  1. In a medium mixing bowl, whisk together the garlic, mustard, vinegar, honey, and half the lemon juice.
  2. With a slow and steady stream, whisk in the olive oil to emulsify.
  3. Add a couple pinches of salt and pepper, and more lemon juice to taste.
  4. Instead of whisking, you can combine all ingredients in a blender or food processor and puree until smooth.
