Cheddar Cheese Sauce

  • 2 tbsp. Butter
  • 3 tbsp. All-purpose flour
  • 1 c Milk
  • 1 1/2 c Tillamook sharp cheddar cheese, shredded
  • 3 pinches Salt
  • 1 pinch Black pepper
  • 2 pinches Paprika
  • 1 pinch Nutmeg


  1. Melt butter in a sauce pan over medium heat. Whisk in butter until smooth to make a roux.
  2. Meanwhile, in a separate small sauce pan, warm up the milk and don't let it boil.
  3. Slowly pour the warmed milk into the roux, whisking to combine. Continue to cook and whisk over medium heat while the mixture thickens, 3-4 minutes.
  4. Reduce heat to medium-low and add the cheese. Whisk or stir until melted, 3 minutes. Add the nutmeg, paprika, and pepper, and salt to taste.
