Cheese Sauce

  • 1 tbsp. Butter
  • 1/2 c Milk
  • 1 tbsp. All-purpose flour, sifted
  • 2 c Sharp cheddar, shredded
  • 1/3 c Parmesan ,grated
  • Salt
  • Black pepper
  • Cayenne powder


  1. In a mixing cup, thoroughly whisk the flour and milk.
  2. In a medium fry or sauce pan over medium heat, combine the butter and milk-flour mixture with a whisk.
  3. When it is hot and just starts to reduce, stir in the cheeses with a spatula until melted and consistent.
  4. Salt and pepper to taste, dust with cayenne powder (optional).
