“Everything Bagel” Chicken Saltimbocca

  • 1 Chicken breast, sliced in half laterally (making 2 breasts)
  • 1 Egg
  • 1/3 c Breadcrumbs
  • 2 tbsp. Trader Joe's Everything but the Bagel seasoning
  • 3 oz Smoked salmon
  • 1/3 c Cream cheese, whipped
  • 1 tbsp. Capers
  • 1/2 tsp. Dill


  1. Preheat oven to 400°F. Prepare a baking sheet with parchment paper or a silicon bake sheet. Lightly salt the chicken, set aside.
  2. Whisk the egg in a bowl with 1 tsp water. Mix the breadcrumbs and bagel seasoning in a separate bowl.
  3. Thoroughly coat each piece of chicken in the egg wash. Then dredge the chicken through the seasoning blend, ensuring a thorough coat.
  4. Place the chicken on the baking sheet and bake for 15 minutes, flipping over half way.
  5. When the chicken is done, remove from oven and let rest. If the capers are in brine, remove from jar and pat dry.
  6. To plate, cover each piece of chicken with a layer of smoked salmon, top with a spread of cream cheese, and sprinkle over capers and dill. Serve immediately.
