Creamy White Beans with Sausage and Broccolini

Ingredients
- 1/2 lb Broccolini (1/2 bunch), trimmed
- 2 tbsp. Olive oil
- 1 Italian sausage
- 1/2 Yellow onion, chopped
- 2 Garlic cloves, minced
- 1 Cannellini beans can (15 oz), drained and rinsed
- 1 Tomato, chopped
- 1/4 c Chicken stock
- Salt
- Fresh ground pepper
- 2 tbsp. Fresh parsley, chopped (or 1 tbsp dried parsley)
- 1/4 c Italian bread crumbs
Instructions
- Bring a pot of lightly salted water to a boil over high heat. Blanch the broccolini and cook until fork-tender, 2-3 minutes. Drain and cut each stalk into 2-inch pieces. Set aside.
- In a large nonstick frying pan over medium heat, add 1 tbsp olive oil and cook the sausage until browned and cooked through, 8 minutes.
- Set the sausage aside and do not clean the pan.
- Add 1 tbsp olive oil to the pan and sauté the onion until soft, 4-5 minutes. Add the garlic and sauté for 30 seconds.
- Add the beans, tomatoes, and stir in the chicken stock. Season generously with salt and pepper. Cook until the liquid becomes creamy, about 4 minutes.
- Stir in the sausage, broccolini, parsley, and bread crumbs. Salt and pepper to taste.
- Cover and keep warm over low heat until ready to serve.
