Creamy White Beans with Sausage and Broccolini

Ingredients

  • 1/2 lb Broccolini (1/2 bunch), trimmed
  • 2 tbsp. Olive oil
  • 1 Italian sausage
  • 1/2 Yellow onion, chopped
  • 2 Garlic cloves, minced
  • 1 Cannellini beans can (15 oz), drained and rinsed
  • 1 Tomato, chopped
  • 1/4 c Chicken stock
  • Salt
  • Fresh ground pepper
  • 2 tbsp. Fresh parsley, chopped (or 1 tbsp dried parsley)
  • 1/4 c Italian bread crumbs

Instructions

  1. Bring a pot of lightly salted water to a boil over high heat. Blanch the broccolini and cook until fork-tender, 2-3 minutes. Drain and cut each stalk into 2-inch pieces. Set aside.
  2. In a large nonstick frying pan over medium heat, add 1 tbsp olive oil and cook the sausage until browned and cooked through, 8 minutes.
  3. Set the sausage aside and do not clean the pan.
  4. Add 1 tbsp olive oil to the pan and sauté the onion until soft, 4-5 minutes. Add the garlic and sauté for 30 seconds.
  5. Add the beans, tomatoes, and stir in the chicken stock. Season generously with salt and pepper. Cook until the liquid becomes creamy, about 4 minutes.
  6. Stir in the sausage, broccolini, parsley, and bread crumbs. Salt and pepper to taste.
  7. Cover and keep warm over low heat until ready to serve.
