Ingredients
- 2 Shallots
- Canola, vegetable, or peanut oil
Instructions
- Peel and slice the shallots as thinly as possible, using a mandoline or sharp knife. Spread out the shallot slices so all pieces are separated.
- Pour oil into a small heavy-bottomed sauce pan and heat over medium-high until a quick-read thermometer reads 325°F.
- Working in small batches, add shallots to oil and fry, stirring constantly, until a light golden brown, about 1-1/2 minutes.
- Remove shallots from oil with a slotted spoon and drain on a paper towel-lined plate and let cool.
