Fried Shallots

  • 2 Shallots
  • Canola, vegetable, or peanut oil


  1. Peel and slice the shallots as thinly as possible, using a mandoline or sharp knife. Spread out the shallot slices so all pieces are separated.
  2. Pour oil into a small heavy-bottomed sauce pan and heat over medium-high until a quick-read thermometer reads 325°F.
  3. Working in small batches, add shallots to oil and fry, stirring constantly, until a light golden brown, about 1-1/2 minutes.
  4. Remove shallots from oil with a slotted spoon and drain on a paper towel-lined plate and let cool.
