Ingredients
- 5 Eggs
- 1/4 c Butter (1/2 stick)
- 1/4 c Flour
- 1/4 tsp. Salt
- 1/2 tsp. Baking powder
- 8 oz Cottage cheese
- 5 oz Monterey Jack cheese, shredded
- 4 oz Green Hatch chiles, diced (1 can) mild or hot, your preference
Instructions
- Preheat oven to 350°F. Melt butter and set aside to let cool. Grease an 8x8\" baking dish with butter (sides and bottom).
- In a medium bowl, beat eggs until a lemony yellow, 2 minutes.
- Add flour, salt, baking powder, cottage cheese, jack cheese, and butter. Beat on low until combined. Stir in chiles.
- Pour mixture into buttered baking dish and bake for 30 minutes, until golden brown and center is firm.
- Let rest for 1-2 minutes before serving. It will deflate a bit, this is expected.
