Hatch Chile Egg Puff

Ingredients

  • 5 Eggs
  • 1/4 c Butter (1/2 stick)
  • 1/4 c Flour
  • 1/4 tsp. Salt
  • 1/2 tsp. Baking powder
  • 8 oz Cottage cheese
  • 5 oz Monterey Jack cheese, shredded
  • 4 oz Green Hatch chiles, diced (1 can) mild or hot, your preference

Instructions

  1. Preheat oven to 350°F. Melt butter and set aside to let cool. Grease an 8x8\" baking dish with butter (sides and bottom).
  2. In a medium bowl, beat eggs until a lemony yellow, 2 minutes.
  3. Add flour, salt, baking powder, cottage cheese, jack cheese, and butter. Beat on low until combined. Stir in chiles.
  4. Pour mixture into buttered baking dish and bake for 30 minutes, until golden brown and center is firm.
  5. Let rest for 1-2 minutes before serving. It will deflate a bit, this is expected.
