Homemade Cupcakes

  • 1/2 c Butter (125g)
  • 3/4 c Sugar (170g)
  • 1 tsp. Vanilla extract (5ml)
  • 2 Eggs
  • 1 1/2 c All-purpose flour (190g)
  • 1 tsp. Baking powder
  • 1/2 tsp. Salt
  • 1 tbsp. Sour cream or Natural Yogurt (optional)
  • 1/2 c Milk (125ml)


  1. Preheat oven to 350°F.
  2. In a large mixing bowl beat together the butter and sugar until light and pale, about 5 minutes.
  3. Add the vanilla extract and eggs one at a time, beating in between each addition.
  4. In a medium-sized mixing bowl sift together the flour, baking powder, and salt.
  5. Add the dry ingredients to the wet mixture along with the sour cream and milk. Fold the batter together until just combined and there are no flour streaks
  6. Divide the cupcake batter between 12 cupcake liners and bake for 20 minutes or until the cupcakes spring back when pressed.
  7. Cool on a wire rack before icing.
