Lemon Salmon en Papillote

  • 12 oz Sockeye salmon fillet
  • 1 Shallot
  • 2 Garlic cloves
  • 1/2 Lemon
  • 1 tsp. Dried dill
  • Salt
  • Pepper


  1. Preheat oven to 400°F.
  2. Salt/season salmon and set aside. Slice the shallot. Zest 1/2 lemon and slice into 1/4" slices (3-4). Peel and rough chop the garlic.
  3. Cut off a piece of parchment paper 15" square or so. Fold it in half and cut the paper into a large heart and set on a baking sheet unfolded.
  4. Spread out the shallots in one half of the parchment paper, add the garlic in a similar manner, then lay down the slices of lemon. These ingredients should spread just outside the shape and size of the salmon fillet. Lay the salmon fillet on top and evenly sprinkle with lemon zest and dill.
  5. Fold over the parchment paper so it is a half heart. Crease the edges around in 1-2" increments so the folds overlap -- this will help it stay together.
  6. Bake for 12 minutes. Remove from oven and let rest 3 minutes before opening the packet and serving.
