Pesto Cream Mediterranean Chicken

  • 1 lb Chicken breasts
  • 2 tbsp. Butter
  • 1/2 c Kalamata olives, pitted, drained
  • 1/2 c Feta cheese
  • 2/3 c Heavy cream
  • 1/2 c Pesto


  1. Preheat oven to 375°F. Butter a casserole dish. Season chicken with salt and pepper and let rest.
  2. Heat butter in a medium skillet over medium heat. Sauté chicken for 4-5 minutes on each side until browned.
  3. Place chicken in casserole dish, add olives and feta, spreading evenly.
  4. In a small bowl, whisk together cream and pesto. Pour over ingredients in casserole dish.
  5. Bake for 24-30 minutes, until sauce is bubbling and chicken reads 165°F in the thickest part.
