Oatmeal Cookies

Ingredients

  • 1/2 c Butter, softened
  • 1/2 c White sugar
  • 1 Egg
  • 1/2 tsp. Pure vanilla extract
  • 1 c All-purpose flour
  • 1/2 c Brown sugar, packed
  • 1/2 tsp. Baking soda
  • 1/2 tsp. Salt
  • 1 tsp. Cinnamon, ground
  • 1 pinch Nutmeg, ground
  • 1 1/2 c Old-fashioned oats (quick)

Instructions

  1. In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in the egg (if doubling, beat in one at a time), then stir in vanilla.
  2. In a separate mixing bowl, combine flour, baking soda, salt, cinnamon, and nutmeg. Stir in to the creamed mixture until just incorporate and you don't see any streaks of flour. Stir in oats until just combined.
  3. Cover, and chill dough for at least one hour.
  4. Preheat the oven to 375°F. Grease a cookie sheet. Roll the dough into walnut sized balls, and place 2" apart on the cookie sheet. Flatten each cookie with a large fork (dip the fork in sugar, optionally).
  5. Bake for 8 to 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
