Oatmeal Raisin Cookies

Ingredients

  • 1 c All-purpose flour
  • 1/2 tsp. Baking powder
  • 1/2 tsp. Salt
  • 1/2 tsp. Cinnamon
  • 1/8 tsp. Nutmeg
  • 1/8 tsp. Allspice
  • 14 tbsp. Butter
  • 1/2 c Sugar
  • 1/2 c Brown sugar
  • 1 Egg
  • 1/2 tsp. Vanilla
  • 1 1/2 c Oats
  • 3/4 c Raisins

Instructions

  1. Preheat the oven to 375°F. Line 2 baking sheets with parchment paper or silicon bake mats.
  2. In a medium bowl, sift together the flour, baking powder, salt, and spices.
  3. In a separate medium bowl, cream the butter and both sugars with an electric mixer on high until light and fluffy, about 3-4 minutes.
  4. Beat in the vanilla and egg. Turn the mixer down to low and slowly add the flour mixture in batches. Scrape the bowl occasionally with a spatula to ensure a consistent mixture.
  5. With a spatula, stir in the oats and raisins.
  6. Scoop the dough into equal portions, roughly 1 1/2 tbsp each, and place the dough balls 2 inches apart on the cookie sheets.
  7. Bake for 12-14 minutes, until slightly golden around the edges.
  8. Let cool on the baking sheets for 5 minutes before moving to a cooling rack and storage.
