Peanut Butter Cookies

Ingredients

  • 5 tbsp. Butter, softened
  • 3/8 c Peanut butter (1/4 c + 2 tbsp), chunky
  • 3 tbsp. Sugar
  • 3/8 c Brown sugar, packed
  • 2 tsp. Milk
  • 1 Egg
  • 1/2 tsp. Vanilla extract
  • 1/4 tsp. Baking soda
  • 1 pinch Salt
  • 3/4 c All-purpose flour

Instructions

  1. Preheat oven to 350°F. Prepare a baking sheet with silicone baking mat or parchment paper.
  2. In a large bowl, mix together butter and peanut butter with a hand mixer at medium speed.
  3. Add white and brown sugars, cream until smooth. Mix in egg, vanilla, and milk.
  4. Sprinkle in baking soda and salt, then mix to combine.
  5. Using a spatula, slowly mix in flour. Do not over mix, stop when just combined.
  6. Scoop 2 tbsp of dough and roll into 1" balls. Place on the baking sheet evenly spaced apart, roughly 2" between each one. Using a fork, flatten each ball slightly, making the traditional criss cross pattern.
  7. Bake at 350°F for 10-13 minutes, or until the edges are turning golden and the tops are no longer glossy.
  8. When done, remove from oven and let cool on the baking sheet for at least 10 minutes before moving to a wire rack to cool completely.
