Ingredients
- 1 Large egg
- 2 Chicken breasts
- 1/2 c Pecans, finely chopped or crushed
- 1/2 c Plain bread crumbs
- 1/4 tsp. Nutmeg, freshly ground
- Sea salt
- Black pepper, freshly ground
- Olive oil
Instructions
- Preheat oven to 325°F. Clean chicken breasts, season, and set aside.
- Combine Pecans, bread crumbs, nutmeg, 1/4 tsp salt, and a pinch of pepper in a small bowl and stir to combine. Alternatively, Place all ingredients unprepared or chopped in a food processor and pulse grind to combine. Spread mixture on a plate.
- Beat the egg in a medium bowl, add 1 tsp of water and combine. Dredge each piece of chicken in the egg then coat with the pecan bread crumb mixture. Set aside.
- In a large non-stick pan, heat 3 tbsp olive oil. Cook chicken 3-4 minutes on each side, until golden brown. Transfer pan to the oven and bake for 10-15 mins, until cooked through and a thermometer reads 165°F. When done, remove from oven and set aside, tenting with foil, for at least 10 mins.
