Ingredients
- 2 lb Baby red potatoes, washed, quartered
- 1/4 c Olive oil
- 6 Garlic cloves, minced
- 1 tbsp. Italian seasoning
- 1 tsp. Sea salt (to taste)
- Black pepper, fresh ground, to taste
- 1/3 c Parmesan, grated
- 1 tsp. Parsley, dried
Instructions
- Preheat oven to 400°F. Position a rack on the 2nd lowest position. Line a large baking sheet with parchment paper and set aside.
- In a medium pot, bring water to a boil, enough to cover the potatoes. Parboil the potatoes for 7 minutes, then drain into a colander.
- In a large bowl, combine olive oil, minced garlic, Italian seasoning, salt, and pepper. Toss the potatoes in the bowl to evenly coat. Arrange the potatoes in a single layer on the baking sheet. Bake on the bottom rack of the oven for 20 minutes.

- After the first stretch of baking, pull the baking sheet from the oven and toss the potatoes to re-coat in the oil mixture. Add the parsley and parmesan cheese and re-toss. Bake for an additional 10-15 minutes on the bottom shelf.
- When done, the potatoes should be crispy and lightly browned on the outside and soft on the inside. Remove from the oven and let rest for 2-3 minutes before serving: this helps the cheese crisp up on the potatoes.
