Roasted Garlic Parmesan Potatoes

Ingredients

  • 2 lb Baby red potatoes, washed, quartered
  • 1/4 c Olive oil
  • 6 Garlic cloves, minced
  • 1 tbsp. Italian seasoning
  • 1 tsp. Sea salt (to taste)
  • Black pepper, fresh ground, to taste
  • 1/3 c Parmesan, grated
  • 1 tsp. Parsley, dried

Instructions

  1. Preheat oven to 400°F. Position a rack on the 2nd lowest position. Line a large baking sheet with parchment paper and set aside.
  2. In a medium pot, bring water to a boil, enough to cover the potatoes. Parboil the potatoes for 7 minutes, then drain into a colander.
  3. In a large bowl, combine olive oil, minced garlic, Italian seasoning, salt, and pepper. Toss the potatoes in the bowl to evenly coat. Arrange the potatoes in a single layer on the baking sheet. Bake on the bottom rack of the oven for 20 minutes.

  5. After the first stretch of baking, pull the baking sheet from the oven and toss the potatoes to re-coat in the oil mixture. Add the parsley and parmesan cheese and re-toss. Bake for an additional 10-15 minutes on the bottom shelf.
  6. When done, the potatoes should be crispy and lightly browned on the outside and soft on the inside. Remove from the oven and let rest for 2-3 minutes before serving: this helps the cheese crisp up on the potatoes.
