Shakshuka with Feta

Ingredients

  • 2 tbsp. Olive oil
  • 1/4 Red onion, thinly sliced
  • 2 Garlic cloves, thinly sliced
  • 2 Large tomatoes, finely chopped like a consommé
  • 1/2 c Feta cheese, crumbled (around 2 oz)
  • 3 Large eggs
  • 1/2 tsp. Paprika
  • 1/2 tsp. Parsley

Instructions

  1. Preheat oven to 375°F.
  2. Heat olive oil in a large skillet over medium heat. Saute onion until soft, 5-7 minutes.
  3. Pour in tomatoes and season with salt and pepper.
  4. Simmer for around 10 minutes until the tomatoes have thickened. Stir in crumbled feta.
  5. Make 3 wells in the tomato mixture, and crack an egg into each one. Season with salt, pepper, paprika, and parsley.
  6. Bake for 8-10 minutes, until eggs are set. Serve immediately.
