Shakshuka with Feta

Ingredients
- 2 tbsp. Olive oil
- 1/4 Red onion, thinly sliced
- 2 Garlic cloves, thinly sliced
- 2 Large tomatoes, finely chopped like a consommé
- 1/2 c Feta cheese, crumbled (around 2 oz)
- 3 Large eggs
- 1/2 tsp. Paprika
- 1/2 tsp. Parsley
Instructions
- Preheat oven to 375°F.
- Heat olive oil in a large skillet over medium heat. Saute onion until soft, 5-7 minutes.
- Pour in tomatoes and season with salt and pepper.
- Simmer for around 10 minutes until the tomatoes have thickened. Stir in crumbled feta.
- Make 3 wells in the tomato mixture, and crack an egg into each one. Season with salt, pepper, paprika, and parsley.
- Bake for 8-10 minutes, until eggs are set. Serve immediately.
