Shallot Champagne Vinaigrette

  • 1/2 Shallot, diced
  • 1 Garlic clove, minced
  • 1 tbsp. Dijon mustard
  • 2 tbsp. Champagne vinegar
  • 1/8 tsp. Freshly ground black pepper
  • 1 tsp. Fresh lemon juice
  • 1/4 tsp. Salt
  • 1 tsp. Sugar
  • 1/4 c Extra virgin olive oil


  1. In a small/medium bowl, whisk together the shallot, garlic, dijon, vinegar, lemon juice, salt, and pepper.
  2. Whisking continually, slowly pour in the olive oil in a continually stream to emulsify into a vinaigrette.
  3. Optional: For a smoother (less chunky) dressing, pulse the vinaigrette in a food processor until desired consistency.
