Shortbread Cookies

  • 1/2 c Butter, softened (1 stick)
  • 1/4 c Sugar
  • 1 c Flour, sifted


  1. Preheat the oven to 300°F. Grease an 8x8" baking pan.
  2. Using a stand mixer or in a mixing bowl, cream the butter and sugar until combined and light in color.
  3. Gradually stir the flour into the creamed mixture until combined. Do not over mix or work too hard.
  4. Spread and pat the dough into the baking pan to cover the entire surface and into the corners. Smooth and level the surface. Poke holes all over with a fork.
  5. Bake for 35-40 minutes, or until just lightly browned. Be careful to not over bake. If not ready, add in only 2 minute intervals.
