Ingredients
Batter
- 2 c Apples, diced
- 2 c All-purpose flour (+ 2 tsp for coating apples)
- 1 1/2 tsp. Ground cinnamon
- 1/2 tsp. Salt (skip if using salted butter)
- 1 1/2 tsp. Baking powder
- 1 pinch Nutmeg
- 1 pinch Ground cloves
- 1/8 tsp. Allspice
- 1/2 c Butter
- 1 c Sugar
- 2 Large eggs
- 2 tsp. Vanilla extract
- 1/2 c Milk
Streusel Topping
- 1/4 c Brown sugar, lightly packed
- 1/8 c All-purpose flour
- 2 tbsp. Butter
Instructions
- Preheat oven to 375°F. Thoroughly grease a 12 cup muffin pan.
- In a medium bowl sift together flour, baking powder, salt cinnamon, nutmeg, allspice, and cloves. Set aside.
- In a small bowl, toss diced apples and 2 tsp flour to coat apples. Set aside.
- In a small bowl, mix brown topping ingredients: brown sugar, flour, and butter until mixture forms coarse crumbs. Set aside.
- In a large bowl, Cream/beat together softened butter and sugar until lightened in color, about 3 minutes. Beat in one egg thoroughly at a time. Mix in vanilla.
- Gently fold in flour mixture half at a time, alternating with half of the milk. Stir until just combined. Fold in diced apples.
- Scoop mixture into muffin tins, filling about 2/3 - 3/4 full. Sprinkle crumble topping over tops of mixture in muffin pan.
- Bake for 30 mins or until a toothpick comes out clean from the center. Let cool in the muffin tin.
