Vegetarian Gravy

  • 3 tbsp. Butter
  • 1/2 Red onion, minced
  • 3 tbsp. Flour
  • 1 tsp. Dried rosemary, ground
  • 1/4 tsp. Dried thyme
  • 3/4 c Vegetable broth
  • 3/4 c Milk
  • 1/2 tsp. Salt, to taste


  1. In a medium sauce pan, melt the butter over medium heat. Sauté the onion in the butter for 3-4 minutes, until tender.
  2. Add the rosemary and thyme, and cook for another minute.
  3. Add the flour and cook 5-6 minutes, stirring frequently until it turns medium brown.
  4. Reduce the heat to medium-low and add the chicken broth. Stir until smooth.
  5. While stirring in a circular motion, drizzle in the milk and incorporate thoroughly.
  6. Continue to cook on low, stirring occasionally, for 5 minutes until thickened. Salt to taste.
  7. Optional: Process in a blender for a creamier texture.
