Vegetarian Meatballs

  • 1 Pack Lightlife Gimme Lean Beef (14oz)
  • 1/4 Red onion, finely chopped
  • 1/3 c Italian breadcrumbs
  • 1/4 c Water
  • 1/2 tsp. Garlic powder
  • 1/2 tsp. Oregano (dried)
  • 1 Egg
  • 1 tsp. Salt
  • 2 tsp. Worcestershire sauce


  1. Heat olive oil in a small pan over medium heat. Saute onion until softening and beginning to turn translucent.
  2. Mix all ingredients in a bowl and mash them together using a fork or your hands (hands tend to work best).
  3. Make 1 1/2" (quarter-sized) balls out of the mixture, rolling with your hands.
  4. When ready to cook, heat a 12" skillet over medium-high heat. Add about 2 tbsp olive oil, just enough to cover the bottom of the skillet.
  5. Cook meatballs for 7 minutes, turning every 2 minutes or so to prevent burning and to get an even cook. Reduce heat to medium-low and cook covered for 2 minutes.
  6. Set aside or serve immediately. If serving with a sauce, add meatballs to sauce and cook for 2-3 minutes to merry flavors.
