Banana Walnut Bread

Banana Walnut Bread

Coffee-shop-quality banana nut bread. Feel free to adjust the spices to your liking, more cinnamon, a pinch of nutmeg, or leave them out altogether.  Serve warm with salted butter.  You might need to loosely cover the bake with a piece of foil around 50 minutes depending on how much it’s browning.  Once it passes the hour mark it’ll start to get dark and crispy, while the inside will be perfectly baked.

Ingredients

  • 3 Bananas, properly ripened (no green at the stem), mashed
  • 1/3 c Butter, melted
  • 1/2 c Sugar (scant)
  • 1/4 c Brown sugar, packed
  • 1/4 tsp. Salt
  • 1 Egg
  • 1 tsp. Vanilla extract
  • 1 tsp. Baking soda
  • 1 1/2 c All-purpose flour
  • 2/3 c Walnuts, chopped (optional)
  • 1/4 tsp. Cinnamon
  • 2 pinches Allspice

Instructions

  1. Preheat oven to 350°F. Butter the sides of a 4x8" loaf pan, and cut out a piece of parchment paper to line the bottom.
  2. In a large bowl, mash bananas with a fork or potato masher until a lumpy puree.
  3. Using a wooden spoon, mix butter into the mashed bananas. Stir in the sugars, egg, and vanilla.
  4. Sprinkle the baking soda, salt, cinnamon, and allspice over the mixture and stir in.
  5. Stir in the flour in 2 batches, just enough to combine but do not over mix (some small lumps are ok). Stir in the chopped walnuts (optional).
  6. Pour the batter into the pan and bake for about 1 hour. Test at 50 minutes, and if still gooey, bake for another 10-13. Our last bake was exactly 1 hour, 3 minutes.
  7. Let cool in pan for 1 minute or so, then remove and let cool on a rack until cool enough to touch. Slice with a serrated knife and serve warm with salted butter.
