Pear Crumble

A staple in our house each pear season, we make thispear rendition of our Apple Crumble 3-4 times a week.  Halve the recipe for 2: use 1 large pear, a 16oz ramekin, and bake for 25 minutes.

Ingredients

Pear Filling

  • 2 Bartlett or bosc pears, large, peeled, ripe but firm
  • 2 tsp. Flour
  • 1/4 c Sugar
  • 1/4 tsp. Cinnamon
  • 1 pinch Allspice
  • 1 tbsp. Lemon juice (~1/2 lemon)

Crumble

  • 1/2 c Oats (1 minute instant or 5 minute old fashioned)
  • 1/2 c Flour
  • 1/2 c Brown sugar (loosely packed)
  • 1/4 tsp. Baking powder
  • 1/2 tsp. Cinnamon
  • 5 tbsp. Butter, melted
  • 1 pinch Salt (only if using unsalted butter)

Instructions

  1. Preheat oven to 350°F. Peel and core the pears, then cut into 1" slices, 1/8" - 1/4" thick.
  2. In a medium bowl, mix apples with flour, sugar, cinnamon, and allspice with a wooden spoon. Add lemon juice and toss to coat. Set aside to rest.
  3. In a separate medium bowl, combine all crumble topping ingredients except the butter and gently whisk to combine. Stir in the butter. You should start seeing clumps forming; if not, add more melted butter.
  4. Pour apples into a 1.5 qt baking dish (roughly 6x9") and distribute evenly. Pour the topping mixture over the apples and spread evenly.
  5. Bake 30 minutes uncovered, until the top is a golden brown and the pear mixture is starting to bubble up the sides. Check at 20 mins to see if it is browning evenly and rotate as necessary.
  6. When done, let sit loosely covered for 5 mins. Serve with vanilla ice cream.
